Great info from CraftBeer.com:https://www.craftbeer.com/attachments/0005/0196/beertemperature.pdf
Bine & Vine's take: One of the biggest misconceptions is that bottled beer spoils or will get worse if you purchase it chilled, let it get to room temperature, then chill it again before consuming. We've even had customers tell us that they'd rather purchase bottles at room temp (even IPA's!) because they won't be able to chill them down till later and they're afraid it'll alter the beers flavor. This is 100% false. As long as you don't keep the beer at very high temperatures (90+ degrees) for an extended period of time, the beer will be fine. Beer is more resilient than people think!
These same people should worry more about how a retailer stores their products because THAT has more of an affect on the beer's flavor and overall freshness than re-chilling does.
"Storing beer warm for extended periods of time will shorten the beers shelf-life. This is especially true of non-pasteurized and full-flavored beers, which most craft beers are." and "Refrigerated storage is best for all beers at all times...Non-refrigerated storage accelerates aging and development of off flavors."
At Bine & Vine, we store 99% of our beers (especially hoppy and sensitive beer styles) chilled, and away from direct lighting, so you, the consumer, gets properly stored, fresh beer the way the brewer intended.
Now, I ask, where do you buy your bottles?
